1/2 cup almond meal or ground almonds
1/4 cup coconut flour
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
3/4 cup pumpkin
1/2 cup maple syrup
1/4 cup unrefined coconut oil
3 lg. eggs
1/2 cup golden raisins, if desired
- Pre-heat oven to 325 degrees F
- Combine all wet ingredients in one bowl and all dry ingredients in another.
- Add dry ingredients to wet ingredients and stir until well blended. Stir in raisins.
- Bake in a greased loaf pan approx. 1 hour.
